Preserve the value of your organic ingredients

Dear friend,

Why do you pay extra for organic ingredients? I talk to lots of women about this, and their answers always warm my heart: “Because organic production methods are good for the earth.” “Because buying from local farmers reduces trucking and greenhouse emissions.” “Because I don’t want those toxins in my body!” Good and caring reasons, every one.

But when I shop organic, my reason is better health. One of ten children, I grew up cooking for big crowds, but I never understood the importance of my ingredients until my health—and that of my family—began to wane.

Once I made the switch to organic ingredients and green cooking methods, my health improved significantly. My mysterious headaches and migraines disappeared. My hot flashes became much less severe. And most dear to me, my grandson’s asthma has been practically eliminated now that he is eating pure foods.

With this evidence before me, I became dedicated not only to shopping religiously for organic ingredients, but to making sure that I wasn’t losing their precious nutrients and all the benefits I paid for, just because I wasn’t cooking them properly!

I discovered that to retain the nutrients and other benefits, you must cook your organic ingredients on an inert surface—one that won’t interact with the food you’re preparing. And the best material for this surface is the same material that surgeons, doctors, dentists and other health professionals use: stainless steel.

The more I find out about stainless steel, the more deeply I appreciate not only what it does for my health but also for the environment, right here in my kitchen!

Worried about clean-up? I used to love how quickly I could sponge out my Teflon-coated pans. But as they started getting scratched, I knew those flakes were going into my food and into my body. At first I just bought another Teflon pan and threw the old one away, but that transfers the problem to my local landfill—not good for the environment!

Today, I take the little extra time needed to clean my stainless cookware. Very little sticks to the highly-polished surface, and every piece pops right into the dishwasher. And stainless pans never wear out, so I don’t feel guilty about adding to landfill!

Worried about interactivity? Most Americans microwave their food and cook in aluminum pans—two methods guaranteed to damage your precious organic ingredients.

Your microwave modifies food at a molecular level, creating changes no one has studied. If you don’t like the way your microwave toughens bread, imagine what it’s doing to your other food!

If you’ve ever boiled water in an aluminum pan—and more than half the cookware sold today is aluminum—then you’ve seen how aluminum reacts and changes color. Those reactions release aluminum into your food! Aluminum poisoning has been linked to impaired visual motor coordination and Alzheimer’s disease. Are you ready to take that chance by cooking day in and day out with aluminum? I’m not!

Good stainless steel is completely unreactive—that makes it my choice! And since you’re interested in organic cooking, whether for the environment or your own health reasons, I know it will be your choice too.

But as I set out to convert my kitchen to all-stainless cooking tools, I discovered a problem: good stainless cookware and utensils are hard to find!
