Grilled Chicken
4 or 5 chicken breasts (boned and thawed)
Chef Prudhomme’s Magic Seasoning Blends – Poultry Magic
1-2 T. oil or Organic Cooking Spray
½ c. white wine
Spray the pan with Organic Cooking spray or you may use 1-2 T. of oil. I like to use Grape Seed oil. Coat chicken breasts lightly on each side and cook in the pan until lightly browned on both sides of chicken breasts. There should be no pink on the inside. This usually takes about 5-6 minutes on each side. I cook with a gas cook top so I use low to medium-low heat to make sure the chicken is cooked all the way through and not too fast.
I then simmer the chicken breasts in about ½ cup of white wine turning the chicken once after the wine has cooked down about half-way. The wine makes the chicken breasts oh so succulent and juicy.
Once the chicken is cooked you can use it for a main entrée or in a salad. I love making chicken salads. I use organic greens, red, green or yellow peppers (whatever my mood), grape tomatoes, sunflower seeds and then top with a tablespoon of Raspberry Vinaigrette or a flavor of your choice.
